Stuffed Chicken Tomatoes

I LOVE using essential oils internally is in my cooking.  It is so easy to substitute oils for herbs and spices...AND...did you know that essential oils are 50-70 times more powerful than herbs.  So you really don't need much to get the same health benefits.
Try this fun summer recipe!  It can be used as a lunch or light dinner on a hot summer night.

Stuffed Chicken Tomatoes

Ingredients:

6 large tomatoes
2 cups chicken, cooked and cubed
½ cup red bell pepper, minced
1 celery rib, chopped
1 ½ tablespoons red onion, minced
⅓ cucumber, chopped
¼ cup plus 2 tablespoons olive oil
1 drop Lemon oil
1 drop Cilantro oil
1 tablespoon fresh Italian parsley, chopped
1 tablespoon Dijon mustard
 2 tablespoons of mayo

 Instructions:

  1. Cut a half-inch off top of each tomato. Scoop out pulp. Turn tomatoes upside down on paper towels to drain.
  2. In a medium bowl, combine chicken, bell pepper, onion, celery, and cucumber.
  3. In a small bowl, whisk together olive oil, lemon and cilantro oils, parsley, mustard, and mayo. Pour over chicken, tossing gently to coat.
  4. Line tomatoes with leaf lettuce or spinach leaves. Spoon chicken salad evenly into tomatoes. Refrigerate or serve immediately.

Healthy Hints:

Lemon essential oil is great for gently detoxing the body.  It is great to put in the first glass of water each morning to gently cleanse.  Lemon is uplifting of mood and great for supporting the immune system.

Cilantro essential oil supports easing anxious feelings and can be used in cooking. It may also be of support for sleep.
