Delicious & Nutritious Buckwheat Pancakes

When it comes to breakfast, pancakes are a beloved staple. But what if I told you there's a way to enjoy this classic treat while adding a boost of nutrition to your morning routine? Enter buckwheat pancakes—an earthy, flavorful, and healthful twist on traditional pancakes that will leave you feeling satisfied and energized.

What is Buckwheat?

Despite its name, buckwheat is not a type of wheat at all. It's a pseudo-grain, meaning it’s a seed that's often used like a grain in cooking. Buckwheat is naturally gluten-free, making it an excellent choice for those with gluten sensitivities or celiac disease. Rich in fiber, protein, and essential nutrients like magnesium, copper, and manganese, buckwheat is a nutritional powerhouse that can easily be incorporated into your diet.

Why Choose Buckwheat Pancakes?

1. Nutrient-Dense: Buckwheat pancakes offer more than just great taste. They're packed with nutrients that can help improve digestion, support heart health, and provide sustained energy throughout the day.

2. Gluten-Free: For those avoiding gluten, buckwheat flour is a fantastic alternative to traditional wheat flour. It offers a similar texture without the gluten, making it perfect for those with dietary restrictions.

3. Unique Flavor: Buckwheat has a distinct, slightly nutty flavor that adds depth to pancakes. It's a pleasant change from the often bland taste of regular pancakes, providing a more satisfying and complex breakfast experience.

Milling Your Own Buckwheat Flour

If you want to take your health to the next level, consider milling your own buckwheat flour at home. Freshly milled flour retains more of the seed's natural oils and nutrients, providing even greater health benefits and a richer flavor. Here's how you can do it:

1. Choose Your Buckwheat:
Start with whole buckwheat groats. These are the hulled seeds of the buckwheat plant and can be found in most health food stores or online. I get mine at Azure Standard.

2. Prepare Your Equipment:
To mill your own buckwheat flour, you'll need a grain mill or a high-powered blender. A grain mill is the best option for producing a fine, consistent flour, but a powerful blender can also do the job, especially if you're only milling small quantities. I use the Nutrimill Classic Grain Mill for all of my milling.

3. Milling the Buckwheat:
Simply add the buckwheat groats to your grain mill or blender. If using a grain mill, follow the manufacturer's instructions for the best settings. Be sure to mill only as much flour as you need, as freshly milled flour can spoil faster due to its higher oil content.

4. Storing Freshly Milled Flour:
If you mill more than you need, store the excess flour in an airtight container in the freezer to maintain its freshness and prevent rancidity. Freshly milled flour starts oxidizing as soon as it is milled and should be used within 14 days for the best flavor and nutritional value.

How to Make Buckwheat Pancakes

Making buckwheat pancakes is simple and requires just a few ingredients. Here's a basic recipe to get you started:

Ingredients:

- 1 cup buckwheat flour (freshly milled, if possible)
- 1 teaspoon baking powder
- 1/2 teaspoon salt (I use Redmond Unrefined Salt)
- 1 teaspoon cinnamon or 2 drops of doTERRA Cassia essential oil
- 2 tablespoons honey
- 1 large egg
- 2 tablespoons melted butter or coconut oil (plus extra for cooking)
- 1 cup water

Instructions:

1. In a large bowl, whisk together the buckwheat flour, baking powder, salt, and cinnamon (omit cinnamon if using the essential oil).

2. Add egg, melted butter or coconut oil, doTERRA Cassia essential oil (if using), and water.

3. Gently stir until just combined. Be careful not to overmix, as this can make the pancakes tough.

4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook for another 1-2 minutes until golden brown.

5. Serve your buckwheat pancakes warm, topped with your favorite fruits, nuts, maple syrup, or a dollop of yogurt or whipped cream.

The Benefits of Using doTERRA Cassia Essential Oil

Adding doTERRA Cassia essential oil to your buckwheat pancakes not only enhances their flavor but also brings a host of health benefits:

1. Antioxidant Properties: Cassia essential oil is rich in antioxidants, which help protect the body from oxidative stress and free radical damage.

2. Supports Digestive Health: Cassia oil has been traditionally used to aid digestion. It can help soothe the digestive tract and alleviate discomfort, making it a great addition to foods.

3. Immune Support: Cassia essential oil has natural immune-boosting properties, helping to support your body’s defenses against common seasonal threats.

4. Warm, Spicy Flavor: The warm, spicy flavor of Cassia adds a delightful depth to your pancakes, complementing the nutty taste of buckwheat. Just a couple of drops can transform your pancakes into a comforting, aromatic breakfast experience.

5. Versatile Use: Beyond pancakes, you can use doTERRA Cassia essential oil in place of cinnamon in a variety of dishes, from smoothies to baked goods, adding a touch of warmth and health benefits to your recipes.

Tips for the Perfect Pancakes

- Adjust Consistency: If the batter is too thick, add a little more water to achieve the desired consistency.
- Add Mix-Ins: For an extra flavor boost, try adding blueberries, chocolate chips, or chopped nuts to the batter.
- Keep Warm: If making pancakes for a crowd, keep cooked pancakes warm in a 200°F (93°C) oven until ready to serve.

Buckwheat pancakes are more than just a gluten-free alternative; they’re a delicious and nutritious way to start your day. Whether you’re buying ready-made flour or milling your own, buckwheat adds a unique flavor and a wealth of health benefits to your breakfast. The addition of cinnamon or doTERRA Cassia essential oil adds a warm, spicy note that complements the nutty flavor of buckwheat beautifully, while also providing immune and digestive support. So, next time you’re in the mood for something hearty and wholesome, give buckwheat pancakes a spot on your breakfast table. Your taste buds—and your body—will thank you!
